TURNIPS AU GRATIN 
4 c. diced pared fresh turnips
2 tsp. salt, divided
1 tsp. sugar
2 tbsp. butter
2 tbsp. flour
1/8 tsp. pepper
1 1/2 c. milk
3/4 c. shredded Cheddar
3/4 c. fine dry bread crumbs

Place turnips in 1 inch of boiling water in medium saucepan. Add 1 teaspoon salt and sugar. Cover and cook 12 minutes or until tender and drain. Melt butter and blend in flour, 1 teaspoon salt and pepper. Remove from heat and gradually stir in milk. Return to heat and cook stirring constantly until mixture thickens and comes to a boil. Stir in cheese.

Alternate layers of turnips and cheese sauce in a 1 1/2 quart casserole. Sprinkle with bread crumbs. Bake at 350 degrees for 15 minutes or until golden brown.
