8 - 10 med. - lg. peeled or unpeeled potatoes 1 stick butter 2 sm. - med. thin sliced onions 1 tsp. salt 1/2 tsp. pepper Arrange heavy duty aluminum foil in a "cross" pattern, allowing enough extra foil so the edges can be folded over each other and sealed. To prevent leakage, lay the foil in a 9 x 13 or larger oblong baking dish. Slice potatoes and onions. Layer potatoes, onions and slices of butter in two or three layers, seasoning with salt and pepper each time. Fold the edges of the foil over each other and crimp the edges to seal in the flavor. Cook for 1 1/2 hours at 350 degrees. Potatoes can be served in the foil. If you do not lay the foil in a baking dish, use a cookie sheet. It can also be cooked on the grill. |
