RICH BASIC SWEET DOUGH 
5 1/2 c. flour
3/4 c. sugar
1 tsp. salt
1 tsp. grated lemon peel
1 c. butter
1/2 c. warm water
2 pkg. dry yeast
1 c. warm milk
2 eggs, beaten

Combine flour, sugar, salt and grated lemon peel. Cut in butter with pastry blender until the mixture resembles coarse meal. Measure warm water into a small warm bowl. Sprinkle in yeast; stir until dissolves. Add warm milk, eggs and dissolved yeast to flour mixture. Beat until thoroughly blended.

Cover the bowl with plastic wrap, then cover it with a towel. Let it rest for 20 minutes. Punch down, turn the dough out onto heavily floured board and proceed with whatever raised sweet roll, coffee cake, bun you are planning to bake.

This dough tastes delicious. I do wish that the recipe were more specific regarding technique. I am not sure about "mix until thoroughly blended." I am using a stand mixer. Shall I just mix until combined and lumpy or mix until a smooth dough forms? I sure do not want to overwork my dough, so I've left it lumpy. Oh boy. And for Christmas cinnamon rolls! I hope it works.
