CALIFORNIA CAKE 
1 box yellow cake mix (regular or lite)
1 can Mandarin oranges (not drained)
4 eggs (can use Egg Beaters)
1/2 c. oil

Beat cake ingredients until smooth. Pour into greased and floured 9 x 13-inch pan. Bake at 350 degrees for 25 to 30 minutes, until toothpick comes out clean. Cool cake.

FROSTING:

15 1/2 oz. can crushed pineapple, drained
1 pkg. vanilla instant pudding (regular or sugar free)
8 or 9 oz. Cool Whip

Mix frosting ingredients and spread on cake.

Keeps covered in refrigerator for a week. Tastes even better on 3rd day.
