ZIPPY CHICKEN STIR FRY 
1/2 c. Miracle Whip salad dressing
1 tbsp. soy sauce
1/2 tsp. ground ginger
1/4 tsp. crushed red pepper
2 tbsp. oil
3 chicken breasts, skinned and boned
1 c. broccoli flowerets
1 c. red pepper strips
1 c. carrot slices
1/4 c. sliced scallions
1 clove garlic, minced
4 c. hot cooked rice

Stir the salad dressing with the soy sauce, ginger, and red pepper. Cut the chicken into strips. Heat the oil in a wok and stir fry the chicken for 4 minutes. Add the vegetables and garlic and stir fry another 3-4 minutes until crisp-tender. Stir in the salad dressing mixture and simmer 30 seconds. Add the scallions and toss quickly. Serve over hot rice. Serves 4.
