MIKE'S MEDALLIONS 
1 lb. boneless pork loin chops
Brown spicy mustard (about 1/8 tsp. each medallion)
Salt and pepper to taste
Oil flavored with ginger root and garlic

Pound each chop to about 1/4 inch thickness. Salt and pepper one side of chop. Spread mustard on both sides of chop. Fry in flavored oil. The oil can be found in the Chinese section of the grocery store. Makes 4 servings.
