EASY SMALL PEARL TAPIOCA PUDDING 
1/3 cup small pearl tapioca
3/4 cup water
2 eggs
1/2 cup sugar (or 1/4 cup sugar and 1/4 cup Splenda)
2 1/4 cups milk (1 use water and 1 1/3 cups instant milk)
1/2 tsp. vanilla

Soak tapioca in water in saucepan for about an hour or until the water is absorbed.

Add 2 eggs. Whisk well. Add sugar. Whisk well. Add milk. Whisk well. While stirring with the whisk, cook over medium heat until it comes to a rolling boil and thickens. Remove from heat and add vanilla and whisk again. Cool and serve.

Makes about 6 servings.
