BAKED STUFFED SHRIMP | |
5 lbs. jumbo shrimp, 10 count or larger 2 lbs. butter 1 clove garlic, chopped 2 tbsp. chopped parsley 1 3/4 lbs. ground round buttery crackers 1/4 lb. fine bread crumbs Peel shrimp, split underside and remove vein; set aside. Melt butter over medium high heat. Add garlic and saute 5 minutes or until tender. Remove garlic before the garlic browns. Add parsley, cracker crumbs and bread crumbs. Mix until blended. Place shrimp on an ungreased baking sheet. Spoon mixture into each cavity and bake at 400 degrees for 15 minutes. Yields: 16 to 20 servings. |
