MINESTRONE MILAN STYLE (MILANESE) | |
1/2 cup dry kidney or cannelini beans 1/2 cup rice 1/4 cup extra virgin olive oil 1 (24 oz.) can tomatoes or 1 1/2 fresh ripe tomatoes, chopped 3 cloves garlic 2 cups chopped fresh spinach Pinch of sage Salt and pepper, to taste 2 quarts low sodium chicken or beef soup broth 1 sliced onion 1 tbsp. chopped fresh Italian parsley 2 tbsp. fresh basil or 1/2 tsp. dried Italian herbs 2 stalks celery, diced 2 cups shredded cabbage 2 cups chopped carrots 1/4 cup grated Parmesan cheese Soak beans overnight. Drain. In large pot, sauté garlic, onion, and fresh vegetables in olive oil for ten minutes. Stir. Add rice, beans, salt and pepper, and broth. Cover. Simmer until beans and rice are tender and most of soup has been absorbed. This usually takes about 1˝ hours. Add cheese and mix thoroughly. Season to taste with salt and pepper. Serve with crusty Italian bread, brushed with a little olive oil, sprinkled lightly with Parmesan or other sharp cheese and lightly toasted under a broiler. Serve with extra grated cheese for the soup, if desired. Serves 6 to 8. |
