SWEET POTATO CASSEROLE WITH
PRALINE TOPPING
 
5 lb. sweet potatoes or 6 c. yams, cut in pieces
2/3 c. melted butter
1 tsp. vanilla
1 c. brown sugar
1 c. finely chopped pecans
3 lg. eggs
2/3 c. white sugar
1/3 c. heavy cream
1/2 tsp. nutmeg
1/2 tsp. allspice
1/2 c. flour
1/3 c. butter in sm. pieces

Heat oven to 350 degrees. Grease a shallow, 2 quart baking dish.

Potato Mixture: Beat eggs in large bowl. Stir in potatoes until blended. Add white sugar, 2/3 cup butter, melted. Blend cream, vanilla and spices; add to potato mixture.

Topping: Mix brown sugar, flour and nuts in bowl. Work in 1/3 cup butter until well blended. Sprinkle evenly over potato mixture. Bake 60-70 minutes until topping is browned.
