ZUCCHINI LOAF CAKE 
3 eggs, well beaten
1 c. oil
2 c. sugar
2 c. grated zucchini squash
1 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
3 c. flour
1 c. chopped nuts

Beat eggs. Add sugar and beat well. Add oil, squash and remaining ingredients. Mix and pour into greased and floured pans. Makes 2 loaves or 1 angel pan. Bake at 325 degrees 45 minutes - 1 hour.
