COLD NOODLE SALAD 
5 c. cooked whole wheat or rice noodles
1 c. carrot, grated
1/2 c. diced shallots
1/2 c. finely shredded red cabbage
1 clove garlic, chopped
1 tsp. finely chopped fresh ginger
1 tbsp. low-salt soy sauce
1/4 c. fresh lemon juice
2 tsp. toasted sesame seeds

Combine all ingredients and serve.
