PUMPKIN CHOCOLATE CHIP COOKIES 
1/2 cup butter
1 cup sugar
1 cup canned pumpkin
Two eggs
1 3/4 cups flour
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ginger
3/4 teaspoon nutmeg
1/4 teaspoon cloves
1 teaspoon vanilla extract
2 cups semi sweet chocolate chips

Cream butter and sugar and add unbeaten egg, and beat the mixture again. Stir in pumpkin. Add dry ingredients and blend well. Stir in vanilla and chocolate chips. Drop onto ungreased cookie sheet.

Bake at 375°F for 13 to 15 minutes...you may add nuts, if desired--stir in with vanilla and chocolate chips.

Yield 36-40 cookies Consistency: between a cookie and muffin

These are always the first dessert to disappear at any family holiday gathering!
