KENTUCKY BOURBON SWEET POTATOES 
3 1/2 lb. sweet potatoes (or canned)
1 c. brown sugar, packed
1/2 c. butter
1/3 c. bourbon
1/2 tsp. vanilla
2 c. miniature marshmallows

Cook and mash sweet potatoes. Add sugar, butter, bourbon and vanilla. Beat until well blended. Turn into 2-quart shallow baking dish. Sprinkle marshmallows over top and bake at 350 degrees, uncovered, for 30 minutes or until marshmallows are golden brown.
