KENTUCKY BOURBON SWEET POTATOES 
3 1/2 lbs. sweet potatoes
1 c. sugar
1/2 c. butter
1/3 c. bourbon
1/2 tsp. vanilla extract
2 c. miniature marshmallows

Cook sweet potatoes until done. Pour off water and cool enough to peel. Turn into a bowl. Preheat oven to 350 degrees. Mash sweet potatoes. Add sugar, butter, bourbon and vanilla; beat until well blended. Turn into shallow baking dish; sprinkle marshmallows over top.

Bake, uncovered, 30 minutes or until marshmallows are golden brown. Makes 9 servings (really more).
