MOM'S CHEESECAKE 
CRUST:

2 c. graham cracker crust
1/2 c. 10x sugar
5 tbsp. butter, melted
1 tsp. vanilla

FILLING:

3 lbs. cream cheese
2 c. sugar
1/2 tsp. salt
6 whole eggs
2 tsp. vanilla
2 c. sour cream

Beat first 5 ingredients with electric mixer for 10 minutes. Then add 2 cups of sour cream. Beat 2 more minutes. Pour into crusted pan. Bake at 350 degrees for 60 minutes. Turn off oven. Open door 4 inches, leave cake in oven for 1 hour. Refrigerate before serving. Use 10 inch spring form pan.

CRUST: Mix cracker crust, sugar, butter and vanilla together. Press on bottom and sides of pan.
