PARSLEY SALAD 
2 bundles of fresh parsley, chopped
2 cucumbers, peeled, quartered, and seeds removed
Carrots, chopped
Mushrooms, sliced
2 green apples, cored and diced
Black olives
Dried tomatoes, chopped

DRESSING:

Olive oil
Juice of 1 whole fresh lemon

Mix all produce together. Pour over with preferred amount of olive oil. Squeeze juice of 1 lemon into salad. Toss. Serves around 4 to 6.
