GREEK BEAN SALAD 
1 pkg. pea beans (soak overnight)
Parsley
Scallions
Onion
1 clove garlic
Salt and pepper
Oil (preferably olive)
Vinegar

Cook beans according to package directions until barely tender. Pour cold water over and drain 1/2 hour.

Put in bowl with lots of finely chopped parsley, scallions, onions. Mash garlic, add salt and pepper to taste. Dress with oil and vinegar, being more generous with vinegar.
