JAMACIAN STYLE RICE AND BEANS 
1 dry coconut (blend and juice)
8 oz. dry kidney beans
1 stalk scallion
1/2 tbsp. thyme leaves
1/2 tbsp. garlic powder
Salt, to taste
2 strips of bacon
3 c. rice

Boil coconut juice and beans with bacon until beans are tender. Add water as needed. When beans are tender add scallion, thyme, garlic powder and salt to taste. After 5 minutes add rice and stir. Add water to cover rice (2 inches above level of rice). When it comes to a boil, reduce heat to low and cook to desired tenderness. Add water to rice as needed.
