CRUSTY BAKED EGGPLANT | |
3/4 c. Parmesan cheese 3/4 c. fine dry bread crumbs or cracker crumbs Mayonnaise 1 med. eggplant, about 1 to 1 1/4 lbs. Peel and slice eggplant into 1/4 inch slices. Mix Parmesan and crumbs in a small bowl. Spread mayonnaise on both sides of eggplant. Dip in crumb mixture, gently pressing crumb mixture on slices. Place on greased baking sheet. Bake uncovered at 400 degrees for 10 minutes. Turn slices and bake for 5-10 more minutes until brown and crisp. |
