GARLIC POTATO BAKE 
This used to cost $5!

5 large baking potatoes, peeled OR
10 to 15 red potatoes, peeled or not (tastes best)
1/2 head fresh garlic (or more, if you like)
extra virgin olive oil (EVOO)
1-2 sticks butter

Preheat oven to 350-450°F (depending on your time).

Dice potatoes into 1-inch square pieces.

Spread olive oil on bottom and sides of a large casserole dish.

Break up head of garlic and remove dry part of peel and bake in oven for about 5 minutes or until garlic gives a little.

Dice garlic. Mix with potatoes and place in casserole dish.

Pour or spray (if you can) olive oil over potatoes somewhat generously.

Slice butter sticks evenly over potatoes - to your taste.

Cover. Bake in oven until soft like fries. Uncover and bake till golden or to your liking.

OPTIONAL TOPPING:

chopped cooked bacon
shredded cheese (I used Colby or cheddar/jack but whatever you like)

Once baked to suit evenly spread shredded cheese and bacon pieces over potatoes and bake till cheese is melted.
