Yummy!!! My kind of meal - quick to prepare. I would not have thought the cheese would give the creamy texture it does to the potatoes and carrots.

This was a no muss no fuss kind of recipe. I had to modify it a bit only because I didn't have slices of cheese - only shredded colby-jack. And I had 5 pork chops instead of 4 and only a family-size can of mushroom soup. It turned out great nonetheless. I browned the chops while I was chopping the onion, potatoes and carrots. This is a very flexible recipe and can be modified quite easily with stellar results.

Very easy to prepare and uses ingredients that I always have in the house! I have made this several times and all 4 of us like it! I have substituted broccoli and cauliflower for the carrots and it is very yummy!
