BUTTERNUT SQUASH CASSEROLE 
1 stick butter
1 c. sugar
Dash vanilla
1 butternut squash
3 eggs

TOPPING:

2 c. corn flakes
1/2 stick butter
1/2 c. sugar
1 pkg. nuts

Cook squash until tender. Cool. Then peel and remove seeds and strings. Combine squash, melted butter, sugar, eggs and vanilla. Mix well. Bake in casserole dish at 350 degrees about 30 minutes or until set.

For topping, melt butter. Add corn flakes, sugar and nuts. Cover casserole with topping. Bake at 400 degrees for about 10 minutes.

Very good recipe!! The whole family loved it, even my son, and he is very picky! Will definitely be making this one again! :) Instead of corn flakes I used Ritz crackers, and it was great!
