6 to 8 med. sized green peppers 2 c. shredded Cheddar cheese Approximately 1 1/2 pt. half and half cream (may use milk if desired) 1 stick butter Soda crackers Salt Pepper Wash, clean and cut peppers into small pieces. Boil until tender, not mushy. In baking dish, place layer of crumbled crackers, then layer of peppers, thin layer of crackers, then a layer of the Cheddar cheese (use plenty of cheese). Repeat until dish is filled to within 1 inch of the top. Cover with a thin layer of crackers and more cheese. Dot with a stick of butter, cover with cream, salt and pepper to taste. Not much salt is needed as the crackers provide some. Bake at 350 degrees until milk is absorbed and the top is browned. |
