CASSEROLE MUFFIN BREAD 
1 pkg. active dry yeast
2 1/2 - 3 c. all-purpose flour
1 tbsp. sugar
1/2 tsp. salt
1 1/4 c. water
Corn meal for coating

Combine yeast and half of flour. Heat water, sugar, and salt to 120 to 130 degrees. Add to above dry mixture. Beat well with electric mixer. Then stir in enough of remaining flour to make a soft dough. Let rise in greased bowl, covered, about 1 hour. Punch down; let rest 10 minutes, covered. Grease a 1 1/2 quart casserole and sprinkle it with corn meal. Place dough in casserole. Sprinkle top with corn meal. Let rise, covered, until double. Bake in hot oven (400 degrees if metal dish, but 350 degrees for glass) for about 40 to 45 minutes or until done.
