SPINACH CASSEROLE 
2 (10 oz.) pkgs. frozen chopped spinach, drained and thawed
2 c. cream style cottage cheese
1 tbsp. grated onion
1 1/2 c. American cheese, cubed (Velveeta for example)
1/4 c. flour

Thoroughly combine all ingredients in a mixing bowl. Spread out in a 9 x 13 inch baking pan. Bake at 350 degrees, uncovered, for 1 hour or until done - when cheese browns on top. Cut into squares and serve.

Variation: 2 (10 ounce) packages frozen broccoli, thawed and drained, may be substituted for spinach. Yield: 8 servings.
