SWEET POTATO CASSEROLE 
2 c. sweet potatoes, cooked & drained
1 c. evaporated milk
Dash of salt
1/2 c. coconut
1 egg
1 c. sugar
1 tsp. vanilla

TOPPING:

1 (8 oz.) bottle maraschino cherries
2 tbsp. cornstarch
1 c. sugar
1 lg. can crushed pineapple

Preheat oven to 350 degrees. Mix potatoes, milk, egg, salt, 1 cup sugar, coconut and vanilla together. Put in greased casserole. Bake for 45 minutes at 350 degrees.

Then make topping. Combine cherries and juice with pineapple. Mix 1 cup sugar and cornstarch and add to pineapple mixture. Cook until glazed, about 10 minutes. Pour over potatoes and bake 10 minutes more.
