MUSHROOM MEATLOAF 
1 lb. ground beef (or turkey)
1 egg
1/4 c. chopped onions
1 stack crackers, ground up
Salt and pepper
1 can cream of mushroom soup

Mix ingredients (except for 1/2 can soup). Put in baking pan. Bake for approximately 45 minutes at 350 degrees. Remove from oven, top with remaining soup, and strip with ketchup, if desired. Return to oven for 15 minutes. Serves 4.

This meatloaf is AMAZING! The only change I made was that, since I didn't have an onion, I replaced the onion with onion powder. I also added a few spices -- oregano, parsley. It was moist, and full of flavor!
