1 1/2 c. corn meal 1 1/2 c. boiling water 1/3 c. milk 1 tbsp. oil or bacon drippings 1/2 c. finely cut onion 2 eggs 1 c. sifted flour 3 tsp. baking powder 1 1/2 tsp. salt 1 tsp. sugar Stir corn meal in boiling water. Cook until forms a ball 5 minutes. Remove from heat. Add milk, oil, and onion. Beat eggs in large bowl on high speed for 1 minute. Gradually add corn meal. Beat at low speed. Sift flour, baking powder, salt and sugar. Add to batter. Drop by teaspoonfuls into shortening preheated to 375 degrees. Fry until golden brown, about 6 minutes. Drain. Serve with fried fish. |
