POTATO BAKE 
5 to 6 c. mashed potatoes
Salt and black pepper
3 eggs, separated
3 to 4 tbsp. butter, melted and cooled
1/2 to 1 tsp. paprika
1 c. grated Cheddar cheese
1/2 c. each chopped red and green pepper

1. Season potatoes with salt and pepper.

2. In a small bowl beat egg whites until stiff.

3. In a large bowl, lightly beat egg yolks. Add butter and paprika. Beat well. Add potatoes, cheese and peppers. Stir until well blended. Fold in egg whites.

4. Transfer mixture into a buttered 6 cup ring mold or 1 1/2 quart casserole.

5. Bake at 350 degrees for 40 to 50 minutes until lightly browned.
