PECAN BUTTER BALLS 
2 c. sifted all purpose flour
1/4 c. granulated white sugar
1/2 tsp. salt
1 c. soft (not runny) butter
2 tsp. vanilla extract
2 c. minced pecans
1 c. finely chopped pecans

Sift together flour, white sugar and salt. Add butter, vanilla. Work with spoon or hands until well blended. Add minced pecans. Shape into 1 inch balls. Roll in 1 cup finely chopped pecans. Put on ungreased cookie sheet. Bake in preheated oven (325 degrees F.). Remove to wire racks. Makes about 4 1/2 dozen.
