NEAPOLITIAN PORK CHOPS WITH
MUSHROOMS
 
3 tbsp. olive oil
1 garlic clove, minced
6 pork chops, trimmed of excess fat
Salt and pepper to taste
2 tbsp. tomato paste
1/2 c. white wine
1 lb. mushrooms, sliced

Brown pork chops in garlic and olive oil. Pour off excess fat. Season with salt and pepper. Add tomato paste, wine and mushrooms. Simmer, covered, for 40 minutes to 1 hour, depending on thickness of chops. Stir occasionally and add a little more wine if necessary.

My husband LOVED this recipe. He wants me to give it to a couple of friends. I didn't have paste so I used tomato sauce. It was a bit saucy that way. Still he loved it. It goes in the recipe box to cook again.
