WHITE CHOCOLATE CRANBERRY
COCONUT COOKIES
 
3/4 cup (1 1/2 sticks) butter
1 cup confectioners' sugar
1/3 cup granulated sugar
2 eggs, lightly beaten
2 1/4 cups all-purpose flour
1/2 tsp. salt
1 tsp. baking soda
1 1/2 tsp. vanilla extract
3/4 cup cranberries
1 cup white chocolate chips
1 cup coconut flakes

Preheat oven to 375°F.

In a mixing bowl, cream together butter and sugars. Add eggs.

Measure out 2 1/4 cups of flour. After measuring the flour, mix with remaining dry ingredients in another bowl. Add the flour mixture to the creamed butter and sugar mixture.

Stir in vanilla, white chocolate chips, cranberries and coconut flakes.

Drop the cookie batter by tablespoonfuls onto a ungreased non-stick cookie sheet.

Bake at 375°F for 10 to 12 minutes or until cookies are set and firm and light brown.
