SPINACH BALLS 
2 (10 oz.) pkg. chopped frozen spinach
2 c. herb stuffing mix
1 lg. onion, diced
3/4 c. melted butter
4 eggs
1 1/2 tsp. thyme
1/2 c. grated Parmesan cheese
1 clove garlic, minced
Salt and pepper to taste

Cook spinach according to package directions. Drain and squeeze out lightly when finished cooking. Mix all ingredients thoroughly. Chill about 2 hours or more. Roll into ball about 1 inch in diameter. Bake at 300 degrees for 30 minutes. Makes 4 dozen.

You can make ahead of time and freeze but do not cook until ready to serve. A terrific appetizer!
