SPINACH RICOTTA BALLS 
4 tbsp. Parmesan
1 lb. ricotta
10 oz. frozen chopped spinach

Punch holes in box. Thaw in microwave, then cook another 2 more minutes in box. Squeeze out all water.

1 egg
1 tsp. nutmeg

Mix egg, cheese, nutmeg and ricotta. Add drained spinach. Roll small balls in flour. Cook a few at a time in boiling water until they rise to top, about 3 minutes. These are great with melted butter and lots of cheese, or in chicken broth.

Since microwave ovens vary in power, you may need to adjust your cooking time.
