MASHED POTATO CAKE 
2 eggs
1/2 cup shortening (Crisco)
2 cups sugar
1 cup mashed potatoes
1/2 cup milk
2 cups all-purpose flour
4 tbsp. cocoa
2 tsp. baking powder
1/2 tsp. nutmeg
1 tsp. cinnamon
1 tsp. vanilla
1 cup raisins, dates, or figs (optional)
1 cup chopped walnuts (optional)

Beat eggs and potatoes together until smooth. Add remaining ingredients, except fruit and nuts. Continue beating until smooth. Stir in fruit and nuts. Pour into Bundt pan or angel food cake pan.

Bake at 350°F approximately 50-60 minutes. Test with toothpick.
