SUNSHINE DIVINITY 
2 c. sugar
1 1/2 c. light corn syrup
1/3 c. water
2 egg whites
1 tsp. vanilla
3/4 c. finely chopped candied cherries
3/4 c. chopped dates

Combine sugar, corn syrup and water in 3 quart bowl. Stir until sugar dissolves. Microwave 5 minutes on High or until mixture is clear.

Stir thoroughly. Microwave 8 minutes on High or until a small amount dropped in very cold water forms a hard ball (260 degrees).

While syrup is cooking, beat egg whites until stiff peaks form. When syrup is ready beat egg whites with electric mixer while slowly pouring into a thin stream of hot syrup. Add vanilla.

Beat until candy loses it's gloss (about 6 to 8 minutes). Fold in fruit and nuts.

Drop from buttered teaspoon onto waxed paper or spread in a buttered 10 x 8 inch pan. Cut into squares when cool. Note: Do not make divinity when humidity is high as it will not set. Do not use candy thermometer in microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.

This is a fantastic recipe that I have used for years; however, it is only 1/2 of light corn syrup, not 1 1/2 in the same recipe I use from the book that came with my microwave years ago.
