WHITE FRUIT CAKE | |
1 c. sugar 1/4 lb. butter 3 eggs 2 c. flour (plain) (1/2 c. of this flour on fruit and nuts) 8 oz. Angel Flake coconut, frozen 1/2 lb. green cherries 1/2 lb. red cherries 1/2 lb. white raisins 1/2 lb. pineapple, candied green and red 1/2 qt. pecans (2 c.) 1/2 tsp. baking powder Mix a 1/2 cup of pineapple juice with fruit and nuts. When cake is done, pour 1/2 cup pineapple juice on cake while hot. Cook in tube pan at 250 first hour, 300 1/2 hour, 325 1/2 hour. |
