CURRIED CHICKEN CANTALOUPE SALAD 
1 sm. cantaloupe
1 c. seedless green grapes, halved
1 c. cubed cooked chicken
1/2 c. sliced celery
2 tbsp. slivered almonds, toasted
1/2 c. mayonnaise or salad dressing
1/2 c. dairy sour cream
1 tsp. soy sauce
1/2 tsp. curry powder
1/4 tsp. salt

Using a saw-tooth cut, halve melon, remove seeds, scoop out melon pulp; cube. Combine cubed melon, chicken, grapes, celery, and almonds. Mix together remaining ingredients; add to melon mixture and toss. Serve in melon cups. Makes 2 or 3 large servings.
