SASSAFRAS TEA
6 dry sassafras roots, 3 to 4 inches in length

What are sassafras roots?

1. A deciduous eastern North American tree (Sassafras albidum) having irregularly lobed leaves and aromatic bark, leaves, and branches.

2. The dried root bark of this plant, used as a flavoring and a source of a volatile oil.

Sassafras roots dropped into a 2 or 3 quart enameled pan and covered with as much water as is desired, depending on the number you wish to serve. Let boil until the tea is dark in color. These roots may be boiled over and over for day as the flavor increases with successive boilings.
