GREAT MUFFINS (Low Cholesterol) | |
1 c. Fiber One cereal (or other bran cereal) 1/2 c. rolled oats (uncooked) 1/2 c. hot water 2 egg whites 1/4 c. vegetable oil 1/4 c. molasses 1/4 c. honey 1 c. buttermilk 1 tsp. vanilla 3/4 c. oatbran 1 1/4 c. all-purpose flour 1 tsp. baking soda 1 tsp. baking powder 1/2 c. raisins (chopped dried apricots can be used or blueberries) Golden raisins are nice in these recipes too Preheat oven to 400 degrees. In large mixing bowl, combine Fiber One cereal, rolled oats and hot water; stir to moisten and set aside. In a small bowl blend egg, oil, molasses, honey, buttermilk and vanilla. Blend with beater. Add to cereal mixture and stir to blend. Stir in oat bran. Add flour, soda and baking powder; mix until flour just disappears. Add raisins. Makes about 20 small muffins. Bake at 400 degrees for 20 minutes. |
