SWEET AND SOUR CHICKEN 
1 lb. chicken, cook and cut up
1 tbsp. vegetable oil
1 med. onion
1 med. green pepper
2-3 carrots, sliced
2 (8 oz.) cans Dole chunk pineapple, undrained (not heavy syrup)
1/4 c. white vinegar
3 tbsp. brown sugar
3 tbsp. catsup
3 tbsp. soy sauce
1 tbsp. cornstarch
1 tsp. ginger
Rice

Boil chicken and cube. Saute onions and green pepper. Cook carrots separate. Combine all ingredients - chicken, onion, green pepper, carrots, and pineapple. Cook remaining ingredients for the sauce. Pour over chicken mixture.
