OVEN FRIED EGGPLANT 
1/2 c. cornmeal
1/2 tsp. salt
1 egg, beaten with 1 tbsp. water
sliced eggplant or squash
cooking spray

Spray 15 x 10 x 1-inch cookie sheet with Pam.

Dip slices in egg mixture and dredge in corn meal. Place in single layer on baking sheet. Spray with cooking spray.

Bake at 450°F for 30 to 40 minutes or until golden brown. Turn once, if desired.

Yield: 6 servings about 64 calories each serving.

Good to use in Eggplant Parmesan.
