OVEN "FRIED" EGGPLANT 
1 med. eggplant
6 tbsp. lo-cal Italian dressing
6 tbsp. grated Parmesan cheese
6 tbsp. packaged bread crumbs

Slice and pare eggplant 3/4" thick. Soak in cold water 10 minutes. Drain and blot on paper towels. Dip in 1. salad dressing 2. cheese 3. crumbs. Put on jelly roll pan (15") sprayed with Pam or other spray. Bake at 450 degrees for 7 minutes. Turn and bake 5 minutes more.
