HEAVENLY PECAN PIE 
3 egg whites
1 c. sugar
1 tsp. baking powder
1 c. finely crushed graham cracker crumbs
1 c. coarsely chopped pecans
1 tsp. vanilla

In a large bowl, using a electric mixer, beat egg whites until stiff peaks for when beaters are slowly raised. Gradually add sugar to whites, beating continually at high speed. Fold in baking powder and cracker crumbs. Add vanilla and pecans. Turn mixture into a greased 9 inch pie pan, spreading out to the edges. Bake at 350 degrees for 25-30 minutes. Do not over bake. The pie will make its own crust. It may be topped with whipped cream. This serves 8.
