SMELTS BAKED IN ORANGE SAUCE 
2 lbs. smelt, thawed & pressed
Salt (to taste)
Pepper (to taste)
1/4 c. butter, melted
1/4 c. orange juice
1 tsp. orange rind, grated

Arrange smelts in greased baking dish. Sprinkle with salt and pepper. Combine melted butter with orange juice and rind. Pour over fish. Bake in 450 degree oven 10 minutes. Makes 6 to 8 servings.
