ZUCCHINI STEW 
3 tbsp. oil
1 lg. zucchini
1 lb. sausage, sliced
1 clove garlic
2 lg. onions
3 green peppers
3 lg. ripe tomatoes
1/2 lb. green beans
1/2 lb. mushrooms
1 sm. can tomato sauce
4 tbsp. grated Italian cheese
4 tbsp. parsley flakes
1 tbsp. sweet basil
1 bouillon cube
1/2 c. wine
2 tbsp. salt

Cut all vegetables in large pieces. Heat oil in heavy pan, brown sausage, garlic, onions, green peppers. Add tomatoes, bouillon cube, green beans and sauce and spices. Simmer with lid until beans are tender. Add zucchini, mushrooms, wine and cheese. Simmer just until zucchini is transparent. Do not over cook zucchini. Serve over noodles, rice, or spaghetti.
