MRS. F.'S ZUCCHINI STEW 
1 1/2 lbs. ground beef
1 lg. onion, chopped
6 sm.-med. zucchini, sliced
1 lg. can tomatoes
Grated cheese

Brown ground beef in 4 quart pan. Add onion to meat. Cook until onion is tender. Drain off most of the fat. Remove 1/2 of the meat from the pan. Add thick layer of zucchini on meat in pan. Layer remaining meat. Then cut up canned tomatoes, reserving the juice. Then grated cheese. Add about 1/2 cup tomato juice. Put on low heat to simmer until zucchini is done. Turn off and put layer of cheese. Put on lid enough to melt.
