POTATO, BACON AND ONION QUICHE 
2 lg. potatoes
1 sliced onion
Parmesan cheese
8 slices bacon, chopped and browned
6 oz. Swiss cheese, grated
3 eggs
1/2 tsp. seasoned salt
1/2 tsp. dry mustard
2 dashes dried red pepper

Boil potatoes. Then slice and brown in butter with the onion. Coat slightly with Parmesan cheese add the browned bacon bits. Cook until potatoes are slightly brown. Place in pie shell. Cover with cheese. Whisk remaining ingredients and pour in pie shell. It will probably not all fit. Bake at 375 degrees for 45 minutes to an hour.
