CHICKEN PARMIGIANA 
3 boneless chicken breasts
2 eggs, lightly beaten
1 tsp. salt
1/8 tsp. pepper
3/4 c. dry bread crumbs
1/2 c. oil
2 c. tomato sauce
1/4 tsp. basil
1/8 tsp. garlic powder
1 tbsp. butter
1/2 c. grated Parmesan cheese
8 oz. Mozzarella cheese, sliced & cut in triangles

Pound chicken breasts until 1/4" thick. Combine eggs, salt and pepper. Dip chicken into egg, then crumbs.

Brown chicken in oil and put in baking dish. Pour off excess grease from frying pan and stir in tomato sauce, seasonings and butter. Pour over chicken. Sprinkle with Parmesan cheese. Cover and bake 30 minutes at 350 degrees. Uncover, place Mozzarella over chicken. Bake 10 minutes or until cheese melts.
